Image-editing software:
Adobe Photoshop/Fireworks
Paint.NET
GIMP
Paint Tool Sai
Sumo Paint (Thanks to Pannypan for mentioning this one)

Video-editing software:
Adobe Premiere (Elements)
Sony Vegas
Windows Movie Maker

Animation software:
Macromedia/Adobe Flash

Video-recording software:
FRAPS
Camstudio
Hypercam
X-fire (in-game recording, but there are better ones)
Auto Screen Recorder (Thanks to x3Hahh's suggestion)

Audio-editing software:
Adobe Audition
Audacity

under video-recording, X-Fire isnt a bad one, though not as good as fraps.

For image-editing, Sumo Paint is great to use, once you've gotten the hang of it.
